Valentino has developed a number of popular signature dishes that have been favorites with diners. These selections, although not always specifically mentioned on the menu, are usually available and cover classic as well as modern Italian fare.
Among those signature creations count the appetizer Crespella D’Anatra, a hearty crepe filled with duck meat and served with a spicy fruit chutney of pears, peaches and apples or the legendary Peasant Spaghetti, a gratifying bowl of pasta mixed with basil, tomatoes, prosciutto, pancetta and shavings of pecorino.
Other choices include the Valentino-classic Coda alla Vaccinara, Roman-style oxtail served with brioche and a bitter chocolate sauce, as well as Risotto con Treviso e Animelle, a rice dish that draws on radicchio, crispy sweetbreads and aged balsamic vinegar as its ingredients.
